🥗 Warm Chicken & Quinoa Power Salad

🧾 Ingredients
For the Salad
- 1 cup quinoa, uncooked
- 2 cups water or low-sodium chicken broth
- 2 chicken breasts (grilled, baked, or pan-seared)
- 1 cup broccoli florets
- 1 cup carrots, sliced
- 2 cups baby kale or spinach
- 2 tbsp olive oil
- Salt & black pepper, to taste
For the Lemon Dressing
- 3 tbsp extra-virgin olive oil
- 1½ tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 1 small garlic clove, minced
- Salt & pepper, to taste
👩🍳 Instructions
- Cook the Quinoa: Rinse. Boil with liquid. Simmer 12–15 mins. Fluff.
- Cook the Chicken: Season and cook until golden (165°F). Slice.
- Roast Vegetables: Toast broccoli & carrots with oil/S&P at 400°F (200°C) for 15–18 mins.
- Make Dressing: Whisk oil, lemon, dijon, garlic, S&P.
- Assemble: Combine warm quinoa, veggies, chicken, and greens. Toss with dressing.
